Nokedli - Quick Hungarian Dumplings



Nokedli is a simple Hungarian dumpling recipe used in many soups or as an accompaniment to stews such as Chicken Paprika (Csirke Paprikas) or Goulash.

It is also known by several other names such as "Kanal Vert", meaning beated with a spoon, as you literally beat the dough with a spoon for a few seconds and it's ready to cook.

Here's what you will need:

2 Cups of Plain Flour
1 Egg
Pinch of Salt

Enough water to make a sticky dough.

Place Flour in a mixing bowl.
Add egg & pinch of salt.

Add enough water, to make a sticky dough.

Note: I usually put the bowl straight under a slow running tap and add the water while mixing with a spoon.


Beat the dough for a few seconds - it's ok for the dough to be a little lumpy, just make sure there are no pockets of raw flour.

Drop Teaspoonsful of the dumpling mixture into simmering soup, and boil for around 2 - 3 minutes.



Another Note: if using as an accompaniment to Paprikas etc, double or triple the recipe (depending on how many people you're cooking for) cook in simmering water.  

To make the process easier you can also use a "Spaetzle" maker instead of a teaspoon.  There are a variety of these gadgets, however, the spaetzle maker below is very similar to the traditional Hungarian nokedli maker. It's so simple to use... check out the image below..
